Introduction

Reporting to the Executive Chef and Managing Director, the Restaurant Manager ensures that the restaurant and bar operate efficiently and profitably while maintaining their reputation and ethos
 

Minimum Requirements

-A degree or diploma in Hotel Management or similar from a reputable college or university

-Minimum of 3-5 years working experience (preferably in a five star busy establishment) as an F&B, Operations Manager or similar position

-Preferably having a bar/mixology background

-Experience handling multiple outlets would be preferred

-Knowledge of food & beverage costing, menu planning, inventory management 

-Ability to work in a fast paced environment.

-Ability to effectively problem solve

-Knowledge of quality service standards

-Knowledge of food and beverage operations and equipment

-Ability to deal with internal and external customers, some who may require extreme levels of patience, tact and diplomacy  in order to diffuse anger, gather information and resolve problems

-Knowledge of Word and Excel, Outlook is required

-Ability to work independently is a must

-Should have basic wine knowledge and advanced wine knowledge is preferred


 

Job Specification

Responsibilities:

-The F&B Manager ensures that the restaurant and bar operate efficiently and profitably while maintaining their reputation and ethos

-Must coordinate a variety of activities and is responsible for business performance in the restaurant/ bar

-Maintaining high standards of food, service, health and safety

-Estimates food and beverage costs, prepares requisitions or purchases for supplies, equipment, food and beverages

-Investigates and resolves food and drink quality and service complaints

-Responsible for hiring, assignment, training, motivation and termination of personnel

-May develop marketing strategy, overseeing customer relations and implement advertising and promotional campaigns to increase business and meet targets set by the directors

-Coordinating the entire operation of the restaurant/bar during scheduled shifts

-Managing and motivating staff throughout their and providing them with feedback

-Reviewing financial transactions and preparing and monitoring budgets to ensure efficient operation and to ensure expenditures stay within budget limitations

-Carrying out Inventory for all equipment, cutlery, crockery, glassware etc in the restaurant and lounge at regular intervals ensuring that losses due to breakage and theft are minimal and within limits set by the directors

-Drafting & implementing procedures for all activities related to the proper functioning of the restaurant & lounge

-Involved with continuous training of the staff in all aspects of food & beverage

-Assumes all responsibility given by the Executive Chef & Managing Director
